Today I made an Apple Pie and I was thankful the first turned out. I have had some bad luck with crust lately. My mom has a great one in her old Better Homes and Gardens cookbook (red & white). I have the updated version of the same book, but the crust recipe is horrible. I have tried it several times and it never works well! Finally got Mom’s from her not too long ago. Perfect. Not all recipes are created equal, especially for pie crust. If you don’t have one, here is mine. It can be doubled for a double crust (for fruit pies).
1 1/2 cups sifted flour
1/2 cup shortening
1/2 tsp salt
4-5 TB cold water
Sift flour and salt together. Work shortening in with a pastry blender (hand tool) until dough resembles cornmeal. Add water, 1-2 TBs at a time, pressing dough together with a fork between water additions. Form dough into a ball. Place the ball on a lightly floured surface and roll out into desired size. Carefully place in pie plate.
***Place ice cubes in the cup of water to keep it cold while using.
